Carboxymethyl cellulose is a water-soluble cellulose ether obtained by chemical modification of natural cellulose.
Carboxymethyl cellulose (CMC) is a thickener. It is a non-toxic and tasteless white flocculent powder at room temperature. It has stable performance and is easily soluble in water. Its aqueous solution is a neutral or alkaline transparent viscous liquid. It is soluble in other water-soluble glues and resins, but insoluble in organic solvents such as ethanol. Carboxymethyl cellulose is a carboxymethyl group-substituted product of cellulose. Depending on its molecular weight or degree of substitution, it can be a completely soluble or insoluble polymer. The latter can be used as a weak acid cation exchanger to separate neutral or alkaline proteins, etc.
Carboxymethyl cellulose can be used as an emulsifier stabilizer and thickener to improve the texture and taste of food, such as when added to jelly, candy, ice cream and other products.
