About Polygalacturonic Acid
Polygalacturonic Acid is a gelatinous acid that exists in some fruits and vegetables, especially ripened fruits. It is soluble in water and contains many carboxyl groups, which make it acidic and capable of forming water-soluble salts. 
Polygalacturonic Acid is one of the components of pectin and is the main component of the gelatin layer in the cell wall in the form of calcium or magnesium salts. For terrestrial plants, polygalacturonic acid is the main component of cell wall polysaccharides (pectin). It binds pectinase inhibitory peptide (PGIP) to protect pectin and prevent fungal pectinase from degrading pectin.
The main function of Polygalacturonic Acid is to increase the viscosity and taste of food. It is widely used in the food industry, such as as a thickener and gelling agent in jams, jellies, salad dressings and other products. In addition, it also has certain health benefits, which can promote intestinal health and lower cholesterol.
